Chart was incorrect, didn't include all the data - here's the correct one. Note the gradual drop in top grate temp once the water in the water pans dried out.

And what I really learned from this graph is, it's best to cook at night if you've painted your drum black.
 
I have found that the more exhaust the better. I have three 2 1/2" holes on mine and only close them to shut it down.

Yes i'd agree you need way more exhaust, especially to be able to do hot and fast cooks which you'll most likely want to do sometime. Air in, air out
