Ranchers reserve brisket

I decided to stick with my 22# beasts in New Holland. My free RR brisket will be cooked for the family this weekend.

No, just a ton of meat and fat. Here's another one. Barely touched by a butcher's knife so I can trim them the way I want with no mistakes. That Boos cutting board looks much bigger without the side of steer on it.

OK, with the cutting board as a background (I have a couple of Boos), I can see the size. Damn.... that's a nice hunk of meat. I've never got to cook one that big... What grade of beef?

Prime. My new meat guy treats me right. They're brought out from the walk-in on a meat hook, wrapped, carried to my car and trimmed a couple hours later. Very little waste other than fat which gets used for other things.
