Question on chili

I have been a member for a bit but never had much to share with the experts! I did however purchase Big Ron's Texas Chili Mix based on reviews from this site.

I have made a few batches following his recipe and they were great. I would however like to use a chuck roast on my next batch. Can I get some recommendations on how to go about this?

I would like to do 1/2 cubes and would prefer to smoke it on the GMG. Would the best way be to smoke the whole thing and then cube it? What temp should I get the meat to prior to?

Any recommendations would be greatly appreciated!
