Welcome to the WSM world! I am constantly amzed at how it holds its temp for looooong cooks. The minion method is the hot ticket. Once that thing gets too hot, it's a pain to get it down, but slowly getting it up to temp. and holding it there is the key. I sent you a PM re: your UDS for our fire station.
