I picked up a 4 pack of Prime NY Strips from Costco last week, planning to cook them today for my wife on Mother's Day. NY Strip is her favorite cut, and I could not pass these guys up for $10.49/lb.
The 4 steaks came in just under 4lbs. A little much for the boys (11 & 13) but they both nearly finished their steaks. I seasoned with Kosher Salt, Pepper and Garlic. I did a reverse sear on the Weber Performer, using Kingsford Pro and a little chunk of Mesquite. Each of the steaks were a little different in size, so knowing my steak was the largest, and I'd eat mine anywhere from Rare to Med Rare, I monitored the temp of my steak throughout the reverse sear...
I'm a Ribeye guy, but I have to say these NY Strips were GREAT!!! Very, very tender and the flavor was great. Picked up a little mesquite and the char added good flavor. As usual, I finished with some unsalted butter and Kosher Salt. I was very happy with these steaks, and for $10.49/lb, their hard to beat...
