My employees have requested brisket and chicken at our annual company picnic that I host. I will be serving appx. 40 people. Is there a rule of thumb used to calculate the quantity of meat that I should acquire? We will provide the normal sides (beans, slaw, etc.) And, of course, I will be boiling 150 lbs of crawfish which I guess will reduce the quantity of meat. Sort of a coonass surf and turf. Thanks.
 
Q for Crowds

Would shoot for 1/2 lb per person if you don't want to run out, even with the crawfish and other fixins.:-D If you overshoot, you can still take the leftunders home - - - good schmoak lasts - - - you knew that, eh? :wink: :wink: BREW!!!
