I cut them into 1 inch squares so they get smoke on all surfaces and season them. Put them on the smoker and when they get a good color put them in an aluminium pan with bbq sauce and cover with foil and cook until falling apart tender. They cook pretty fast…..
 
I always smoke them until they are super tender...usually ends up being 205-207°. By going this high I ensure all that fat is rendered and you won't end up with any chewy bits.

Same here. I cook to tender and soft. I've never bothered to temp them.
