We're having a virtual pulled pork night over here which means some guys (and 1 girl) are smoking some pork overnight for 12 hours.
Some of us have done it before but there are many noobies like me who are doing it for the first time.:-D
The meat prepping pics are from yesterday evening and the rest is from tonight.
When I put up the meat up on the grill and put the lid back temps were rising very...very fast,I overshoot at 250 while I was aiming for 220.
Was fighting for about 20-30 minutes to get it stable to 215 (temp gauge with smalle stem on side of the UDS).
