First brisket done last week as the first cook on my first pellet smoker.

The brisket was pretty good, except the bottom was a little crispy over the burner pot. I may try putting a heat shield next week.

Smoke rings are pretty easy to get on a pellet. But I find that you have to cook at a lower temp. If you get to 250 or above the pellets start to burn too clean. I suppose you can use a smoke tube but that's kind of artificial.
