Small brisket, equilibrium brined/corned, seasoned, and cooked at 250F on Santa Maria grill (with lid) over red oak.
Lighter smoke flavor than when cooked on smoker but still very good.
Love me some pastrami and swiss sandwiches.

Prepared similar to this previous Weber kettle cook.
