Pastrami on Santa Maria grill

Small brisket, equilibrium brined/corned, seasoned, and cooked at 250F on Santa Maria grill (with lid) over red oak.
Lighter smoke flavor than when cooked on smoker but still very good.
Love me some pastrami and swiss sandwiches.

Prepared similar to this previous Weber kettle cook.

I have the Sunterra 36" Santa Maria grill.
Lid helps to trap some of the smoke.

Sunterra sells an optional "VersaLid" for their grills. A kettle lid would work also, although it's a little taller.

I use the lid from my weber 18 on my santa maria. That looks so much more purpose built.
