Opinions On This Dry Rub

It's called Cajun Chicken Spice Mix.

Contains:

paprika
onion
celery seed
salt
chili powder dark
garlic
cayenne pepper
thyme
fennel seed
cumin
oregano
black table pepper

Just ordered some from Spice Specialist. Was thinking of trying it on some pork in addition to the chicken.

What do you think?

Personally I prefer more of a Memphis style rub on pork. Not sure how fennel and oregano would go with it. But I'm not really a fan of fennel anyway.

Yea the oregano and fennel are found in some blackening seasonings that I've tried and I like them for that use.

Then again, I really like the blackening flavor when done properly with melted butter but it burns the heck out of all the spices involved.

May not appeal to me when not blackened and just used as a rub, but I thought I'd try. Didn't scare me away from it anyway.
