Finally got the chance to get this made. I changed up a couple of things from Mike's basic recipe. I used Rotel (it's what I had) instead of tomato puree. I also went with 2 lbs of ground elk that I recently ground up. I add a bit more olive oil since the elk is so lean. I added some pork fat to the elk when it was ground up. But still pretty lean. This came out fantastic. The wife loved it too. The only thing I will do differently will be to drain the meat. I will need to buy some more seasoning real soon. Thank you Mike for producing another great product.
