My wife and I spent most of Saturday and ALL day Sunday building 8 stuffed pork loin roasts. Tons of chopping and butterflying and measuring and formulating and etc. Then, when I have four of those babies with the stuffing spread, and them rolled and tied, I start feeling sick. I've got the four wrapped in foil. Will these freeze and be good to smoke after defrosting later? Or do I smoke them and then freeze them? I was supposed to deliver these to 8 different families in the congregation tomorrow evening but now I don't know if I'll even be able to finish stuffing and rolling and tying the other four tomorrow, let alone smoking all eight of them.
