Not your typical shepherds pie.

Shepherds pies are wholesome and comforting. Perfect for a cold wintery day, and super easy to prepare. Now I realize it isn't a shepherds pie in the traditional sense, but then again, neither am I (just ask my wife.)

For this one, I went with smoked pork covered in bbq sauce, layered with caramelized onions, sweet peppers and carrots. Then topped it with "loaded" mashed potatoes with sour cream, bacon, a blend of cheeses, and seasonings. I couldn't resist the temptation, so I crowned the pie with crispy onions and jalapeños.

Original shepherds' pie was of course made with lamb, my wife makes it ground beef, which of course makes it cows' pie.
