Smoked meatloaf!

2 lbs ground pork
2lbs ground beef
1/2 onion, chopped and sautéed in a stick of butter.
2 green onions chopped.
Cook onions and butter down until foaming.
Let cool.
Cube block of sharp white cheddar. Mix ground meat, onion/butter mixture and cubed cheese.
Season well with Q-Salt and form into loaf.
Smoke in smoker at 225F for 2.5-3 hours until 165F IT

That looks great... my wife and I both love smoked meatloaf. Could you tell me more about the Qsalt thing?


Q-Salt is a salt and pepper blend with portobello mushroom powder, roasted garlic and Celery. We use it on everything, but it shines on beef.

Also the Mayo is Dukes and the bread is sliced Italian
 
Looks good. Love cheese. Being a purist, putting it in meatloaf isn't something I'd do. Despise ketchup glaze. To each, their own.

Used the Nourishing Traditions oven meatloaf recipe for years. Was good first trying it in the smoker but felt it needed something extra to add to the smoke. Adding some sauteed jalapeno did the trick.

I don’t think I’d eat meatloaf again without cheese. Been doing it so long now, it’s become the standard.

No ketchup glaze, that’s just nasty.
