somebody shut me the fark up.
Last week's Carne en su Jugo went over like gang-busters with the family.
I've been obsessed with tweaks to this over the last few days as I consumed the leftovers on Mon / Tues. What would this be like if I swapped out the very mild poblano chile for some roasted Hatch Green Chile!?
Did a bit of clean-up on 3 of the chiles, then put the other veg in the pan to roast for the salsa.
Got down to business with the meat.
Added in 2/3 of the bacon.
Poured in the green chile chile verde.
Cooked and stirred and tasted. 30-ish minutes.
Added in some pintos just before I turned off the heat.
Giving everything a good 20 minutes to relax and mingle before we serve.
