Alright guys so here I am again. Ye' old 26 year old from Chicagoland, as it was a cold one today/tonight.
Threw some spare ribs on the WSM for 5 hours(2 slabs) give or take..basically just made sure they were plyable, starting to slightly pull apart, and pass bending. Trimmed a little bit, took the skin off the bottom there, seasoned with...
4 parts pepper
2 parts salt
garlic powder (eyeball)
smoked paprika (eyeball)
chili powder (eyeball)
along with some store bought brats I smoked with the trimmings of the spares itself I cut off.
260-275 temp for 5 hours. Hard time getting a pure clean fire but managed I thought they were gonna be OVER-smoked but surprisingly wasn't! , spritz'd once and **DID NOT WRAP IN FOIL! PERIOD!**
My girlfriend and i like our ribs a li'l on the "crispy" side, and she said "these are your best ones yet, screw that foil bullsh*t"
And hit them with some homemade texas style bbq sauce a recipe i tinkered with which is...
2 tablespoon butter
1 garlic clove, minced
1 cup ketchup
1/3 cup (packed) golden brown sugar
1/3 cup Worcestershire sauce
1/4 cup fresh lemon juice
1 chipotle chile from canned chipotle chiles in adobo
1/4 teaspoon ground cayenne
1 1/2 tbsp of chili powder (to your liking)
3/4 tbsp of cumin (to your liking)
Salt n' Pepper (to your liking)
Sauce pan, let it boil, simmer, wait like 15 min or so...and enjoy
Enjoy guys I know I did. Next step perfecting my brisket which is 85% there and make my own sausage and beans haha
