Completely up to you. I personally leave on for racer style just for presentation l. For butterfly i cut legs back to base of ham and shoulder to maximize space inside smoker. One thing I learned although butterfly may squeeze into a pit may not be worth it as you have to pay attention to free space for airflow or will cook uneven
Racer style allows to get larger hog in smaller cooker but you dont get all the bark on meat. You also arent able to mop or spritz meat
