I smoked my first fatty last weekend and thought I would share the results. I seasoned my bacon and used chopped up candied jalapenos, colby-jack cheese, and a spoonful of a hot pepper jelly I bought from Trader Joe's for the stuffing. Seasoned with Meathead's MMD inside and out and smoked over cherry wood in my PBC for about 2 hours until 155. Sliced thin and it was great. I'm happy with my first attempt and am looking for suggestions on the fillings for next time. Please share your favorite filling ideas!

I just did one with mild sausage, marinara, cheese, salami, ham, pepperoni, green peppers, onions, oh and a bacon weave. It was awesome.
