I did another experiment with chicken drumsticks. I cut the drummies from leg quarters this time and cut extra skin to wrap around the top. I like the way they look much better but I didn't let them brine long enough and I didn't have enough flavor inside. *sigh* Still have work to do.
I also did an experimental rack of ribs today. I really liked the way they came out. Flavor all the way thru. Great Texture and they were pretty. What do you think?
Yes I know they weren't my best cuts but I was working at the market at the time and customers kept interrupting.
