I love playing with fire and I haven't been doing it any where near often enough. This morning I realized I basically had nothing to do today. I told the wife I was going to relax and BBQ. I went out and rummaged through the freezer and decided on making meatloaf. I mixed ground pork (from rib tip trimmings), ground beef (chuck), minced onions, minced garlic, homemade seasoned breadcrumbs, an egg, some tomato sauce, and salt. I put it in a foil pan and poured more tomato sauce over the top. Into the bandera at 330*. Then I cut open an eggplant, scooped out some of the seeds and stuffed the halves with minced onion and garlic, chopped tomatoes, and grated mozzarella over the top. I then sprinkled some of the breadcrumbs over the top of the cheese. Into the bandera they went too. I boiled some potatoes and made gravy with the drippings in the foil pan. Plated it up and enjoyed it. I also made a pan of coconut lemon bars for dessert. It was a very enjoyable day. I need to get back into doing this more often.
