Decided to go with some live fire tonight on the Santa Maria. Gonna have to get more creative with it since I am missing all of the good upcoming smoking weather while being back in the queue.

First time cooking lamb, came out good but could use some improvements. Think I finally have my Mac&Cheese recipe nailed down after making it at least once a week for a few weeks now. Threw on some brisket boudin I got from a local BBQ shop here in Louisiana. Was also pretty darn good.

That looks really tasty! I am becoming more of a boudin fan over the last year. NEVER tried brisket kind but you will have me searching now!

I know the second Switch restaurant does some different boudin options I remember seeing on their Instagram. I got this one from Gonzo's Smokehouse in Luling, LA. Traditional boudin, Billy's is hard to beat in my book in Scott, LA.
 
Only done lamb once and ate it a couple times. Looks great! Haven't been to Lulling in months with the virus. I'll keep a lookout for the boudin.
