Today was an occasion worthy of a special dinner so I decided on some surf n turf. I picked up a whole tenderloin from Sam’s, which was still priced a bit higher than I’d like, but was only a few bucks per pound above where I was accustomed to buying them at. Went freezer diving for some Costco 13-15 shrimp and we had ourselves a meal.

Step 1: break down the tenderloin - untrimmed it was about 6.5lbs and I had 1.25lb of waste. A small amount of grinder fodder.



Filets selected, shrimp skewered and hit with Big Poppa Smokers Bacon Jalapeño



Onto the Primo XL @ 450*



Total cook time about 8 minutes



Shrimps got a couple minutes per side



Instant Pot roasted garlic mashed potatoes and grilled asparagus to round things out



Just how I like it

Meal fit for a king!!

I like to trim and cut a full TL from time to time as well. Looks like you have down to a science.
