I found a small flat at Sam's Club over the weekend, a little over 5lb's.
Seasoned with SPOG.



Cooked this on the BGE with a few chunks of Hickory.



I let it go until 165IT and then wrapped in foil with 4 oz of Hot Beef Stock.
It finished at 210F. Toothpick tender.



Turned out pretty good for a small flat.










Decided to throw a few chicken quarters on the BGE after brisket finished. Some meals for the week ahead. Seasoned with BPS Money Rub.



Lastly, I made some Andouille in the electric smoker. Gumbo Season is upon us.



It was a busy Labor Day, but I enjoyed it.
