Ok, there's a lot going on here, bear with me..
Tonight's menu features -
Jalapeno Garlic Lime shrimp (13-15ct)
Bourbon shallot bacon wrapped scallops
Daeji Bulgogi (spicy pork)
Grilled Peppers, Onions, and portabella mushrooms
Our stars of the show :
For the Shrimp - Garlic, limes, White wine, kosher salt, jalapenos
Mixed up marinade and added shrimp. You should only marinade about an hour or the lime juice will cook the shrimp for you... think Ceviche
Recipe for the bulgogi -
1 lb thinly sliced pork (lean & boneless preferred)
3 tbsp soy sauce
2 tbsp crushed garlic
½ tbsp crushed ginger root
2 tbsp brown sugar
2 tbsp gochujang (red chili pepper paste)
1 tsp red pepper flakes
2 tbsp rice wine (sake)
2 tbsp sesame oil
1 bunch green onion
I used a hunk of pork sirloin for this.
Thin sliced and into the marinade for a couple hours
For the scallops I used a simple marinade -
3 tablespoons minced shallots
2 tablespoons Bourbon
2 tablespoons maple syrup
1 tablespoon soy sauce
1 tablespoon Dijon mustard
1/4 teaspoon fresh ground black pepper
Cooked up the bacon, mostly.. Still needs to be pliable, but you want the fat rendered.
Pulled the meat and skewered it all up
And I did some veggies... just because ..
all ready!
Onto the grill!
and its time to eat!
