Real name is Michael - 31 years old - started taking smoking and bbq more serious about 2-3 years ago and its become what I look forward too after my Monday morning meetings at work. I think i've really developed a passion for bbq and learning and creating my own flavors and tastes. This is a pretty massive forum with a great following and im looking forward to learning and sharing, i think thats the main reason why I joined, the respect, help and encouragement from the members.

Started smoking on a regular weber kettle, it was fun, but kind of a let down at times as i felt i was really just grilling the meat and not actually getting some good smoke into it to cook it. But, it was good to learn and started me on my way. The pain in the a** part/fun part was learning how to control the temperature on those and trying to figure out the perfect setup on the grill. After a few times, i got the hang of it.

Then i moved into an apartment, bad idea. My grill and bbq days were over for a year as I couldnt have open flames out on the patio area. So - i bought an electric grill and an electric smoker to keep me occupied. Hated both. Grill actually caught on fire, fire extinguisher, was a mess. Never again.

I recently moved back into a place that would allow it and bought myself an offset vertical smoker. I've read mixed reviews on buying one and especially on amazing ribs about how its going to turn you away from BBQ and to do something else, i completely disagree. The best part for me is controlling the fire, temperature and smoke output. Plus, the overall smell of doing it this way. The smoker is the Brinkmann Trailmaster Vertical - relatively cheap smoker (on sale for $250.00) and I read up on others that have purchased it and knew I needed to make some modifications, again, thats part of the fun for me. I think i needed to start there before making a big money purchase and who knows, maybe i'll prefer this one better.

Anyhow, I'm looking forward to being a part of the community, cheers!

We don't have a lot of rules here other than spam and advertising are not permitted, the rest is just common sense, courtesy, and mutual respect for one another.

You'll find a great group of people here with a willingness to help and guide you, regardless of of how simple or how complicated you think your question may be. You'll also find that there are many ways to achieve great food, there is no single "cookie cutter" method as some have been conditioned to think. You'll just have to try a few different methods and soon you'll master the way that works best for you.

We'll be here to guide you and answer your questions as you begin your journey into smoking and BBQ. Pretty soon you'll go from asking questions to posting pictures of your progress, and we will all share in your experience as true Brethren.

We have many different forums here.... Below are just a few of them.

For discussion on BBQ/Smoking related topics, we have the "Q-Talk" Forum. This is a good starting point for all new Brethren.

For those who are interested in competing, We have a "Competition BBQ" forum.

We also have a "Catering, Food Handling and Awareness" and "Catering, Vending and Cooking For The Masses".

We also have a trading forum where members can trade sauces and rubs available from different areas around our country.

For general non BBQ related talk we also have "The Wood Pile" forum.

I hope to see you in the "Q-Talk" forum soon. You'll find help on almost every topic from cooking your first Pork Butt to curing and smoking your own ham and bacon.

If you can't find the topic you need help with, or have questions about a specific topic, just start a new thread in the related forum.

There are many members with years of experience that are willing to answer your questions and share their knowledge to guide you in the right direction. Collectively there is a wealth of experience and knowledge among the membership, including you. Don't be afraid to jump in there and share your knowledge and your experiences as well.

Greetings from L.A., welcome to the forum! I've been there with the apartment thing, it wasn't easy, but I used my WSM occasionally. Pissed off the neighbors a couple times, but then I fed them lol!
