Wandering around with a bag of matchlight, looking for a match.
Hey guys.. haven't been on here in a long time! Used to have a BBQ restaurant in Chicago - Rub BBQ Co.

since then, we've opened 14 restaurants - 5 brands (always only kept 1 BBQ shop.. but also opened The Budlong Hot Chicken (7 stores, sold it 2022), Campfire (wood fired pizza), Grabowskis (Chicago style pizza), Norm's Deli, Hamburger Stan - moved my family to CO and opened AJ's Pit Bar B Q www.pitbarbq.com with my original smokers from Chicago.
Still cooking with post oak. Still have my AN Bewley pits, a couple ole' hickories for chicken, and 2 1000 gallon offset smokers.
we just won a Michelin award in Denver for my BBQ joint, so that was cool..

We just opened a steakhouse with the same name (AJ's Pit BBQ - steakhouse) - wood-fired steaks: smoked, sous-vide, then finished on a Mibrasa wood-fired grill. www.ajsteak.com
Anyways, enough self-promoting...
We're looking at a business opportunity in Mexico... I seemed to remember that a long time ago there was a sticky thread from a guy that opened a spot in Puerto Vallarta (maybe?). anyone remember that?
happy to be back, hope to contribute ...
