Decided to do some “Island style cooking”
Seasoned some wings with Curry

Picked up some Yellowtail Snapper from the local fish market (I have to admit it is cheaper than fueling the boat, bait, beer, etc…….)

Wings went on the Stok

Finishing glaze was ½ C honey, ½ C rum, 1t orange zest, 2T orange juice, 1 t lime juice, ¼ t allspice, ¼ t ginger & ¼ t cayenne
Fish went on the Weber smoke and grill @ about 300◦

Season inside and outside fish with salt and pepper
Stuffing
Saute green onions, onions, garlic, thyme, pepper, tomato, kale, cabbage, and carrots. Add butter, black pepper and lime juice. Cook very lightly.
Stuff into fish on grill for 20 minutes and wrap in foil and finish
Serve with seasoned rice
Seasoned rice with coconut milk
Allow coconut milk to boil for 5 minutes
Add rice and cook
When rice is almost done, add sauteed onions, tomato, and a variety of frozen vegetables - corn, carrots, string beans.

And the finale.

Don’t forget the “Planters Punch”
Planters Punch
Boil sugar and water to make syrup.
Add pineapple juice, lime juice and bitters.
Garnish with orange slices and serve over ice.
