Last night in a book I’m reading there was a page on chicken fried steak.
San Antonio style. Not cream gravy not brown gravy but green chile Queso gravy smothered chicken fried steak. Bride handled the Queso Gravy and leftover pico pintos.

CFS Queso Here’s what she did

Simmered the jarred green enchilada sauce
Slowly added Velveeta
Alternated adding sauce and cheese until desired consistency
Added chopped green chile near end for heat
