Nice cook there GTR! Carolina Treet is a very unique sauce. I haven't used it in a while, but I love it on chicken and pork loins. I always try to send a bottle when I sign up for the trades.

That's how I was first exposed to BBQ in South Texas years ago. The pit was simply a hole in the ground with bricks, expanded metal and angle iron. Folks seem to forget where "pit" comes from in BBQ Pit.

I like the 'Pit'...
All I'd need is to dig one part of my fire pit deeper with a post hole digger.
I have a grate 4' X 2' that I use with Dutch Ovens, when we go camping.

For me it will be a 15 minute job.
I think I'll water the sides, build a fire, and bake them to adobe hardness.
(Similar to a 'Dakota Fire Hole'...)

(My heavy clay soil is bound to be good for something)
