I'm planning on cooking a 20lb ham on the uds somewhere between 250-275*. Approximately how long should this take? Thanks!
 
Alright Brethren, I'm not really sure how long this is gonna take, (I'm hoping 11hrs), but I just put my 21lb. ham on at 6am. I'll try to do better with the pictures today (it's too dark out right now) but I make no promises on how it looks and my UDS isn't painted yet. I wasn't sure how to place it but I put the skin side down. Is this right? Or does it matter? I told y'all I'm a rookie here....
 
I'd let it go undisturbed for at least eight hours at the temps you stated above. At that time you can check temps and get an estimate of how you're coming along. You're on the right track.
