Got one on the WSM today. Using Stubbs briquettes and Pecan chunks for smoke. Some Competition Beef and Pork rub by Oakridge over a mustard slather. Doing periodic spritzing with apple juice/Worcestershire/ Tabasco mix.

Made a pizza last night on the BLUE Performer conversion/Mod Pizza Oven™. The Cowboy worked great and got it up to about 625 degrees:

Great score on the briskie and lump too. Not sure if you noticed but the C&C select briskie is more expensive than the CAB. :crazy:
 
How good does the lid mod work, pizza looks great

Works really well. Got the lid from a Craigslist rusted unit that was $10. Bottom of the unit was rusted through. Next step is to add in a metal plate under the lid to bring the heat closer to the pie. Does work nice as is but I love to tinker. I also need to paint it blue
 
Great looking pizza! I see some bricks under your stone. What was your setup? Did you put them on your charcoal grate?

I keep saying I'm going to do pizza on my kettle, but just haven't done it yet.

I use fire brick on the charcoal grate to raise the stone to the correct height. Putting it on the regular grate made it a bit too high.

Stupid camera phone odd color. It really doesn't look this weird. I did chopped style this time. Made a sandwich on a whole wheat bagel with slaw and a bit of a sauce I whipped up using drippings from the foil, apple juice, Worcestershire, rub, Blues Hogg, and vinegar. brought it to a boil and let it simmer for about ten minutes. Came out nice.
