What should I do with a 20 lb corned beef brisket?

  • Cook it whole, cut it up and freeze some chunks

Damn! Thats a lot of Pastrami!
Cut it into workable chunks.
Soak first to remove some of the brine.
Thirdeyes Pastrami rub.

Really, the smallest was 20 lbs???

Yeah... Some were as big as 23 lbs! They were opening a bunch of cases and putting them into the meat case and all were huge.
 
Mrs Kapn does not care much for pastrami.

SO: I put my serving sized pastrami portions into el-cheapo sandwich bags. Then, those bags are put in ZipLock Freezer bags and labled.
Same as I do my pre-cooked bacon.

I just pull out one little baggie for a couple of sandwiches as needed.

Never any problem with it lasting a long time without freezer burn that way.

Just my approach.
