Cooked for the first hour at 250 then I opened all four 3/4" intake holes on my UDS and the temp got up to about 325 for the second hour.

I used 9# of kingsford with a big handful of apple chips.

All the cheese stayed in the breast.
I did baste with evoo and shake on some Cavendars greek seas.
It was all very moist and tender
