I have one on the UDS as we speak. I layered it with my trial brisket rub and Sweet and Spicy.

It looks tasty thus far. Would you like to see it? :laugh:

I want to say the 3 hour mark. Maybe 2.5 hours in, somewhere between those times.

I am getting the color I am looking for, now I need to taste the slices.:thumb:
 
Maybe, my lab goes through years of super secret trial testing at our super secret plant. It still needs to reach the BBS seal of approval :icon_blush:
