I've got a pork butt that I want to cure for buckboard bacon. Every recipe I've found calls for a store-bought seasoning and curing agent. I want to make my own.


I have a tried and true mix that I use for pork belly bacon. Will it work for a butt as well? I'd hate to waste the butt experimenting.
 
You're right, a nice butt is a terrible thing to waste. :thumb:

Is a curing brine out of the question?

Do you have access to Cure #1 or to Morton Tender Quick?

What product do you have for curing belly bacon?

I finally found Third Eye's tenderquick recipe and used it. That's what I remembered reading many months ago and couldn't find it right away.
