Anymore I cook for two people, me and The Bride. Neither one of us care for pink chicken juices on our plate. Beef can be spurting an artery, chicken has to be clear. I’ve read the materials on chicken juices being ok at 165, it’s been discussed here frequently. Pink chicken juices just doesn’t work for us. I’ve also found that thighs taken to LA Homicide temp provides crisp skin juicy meat, leftovers are easy to pull.

Bottom Line/ personal preference on chicken thigh temp.
