I don't want to beat a dead horse, but don't skimp on the fire extinguisher! I was judging a comp about a month ago, and we heard a huge BOOM! We turned around and saw something go flying in the air followed by a large flash of fire. One of the pit guys yelled, "Fire! Fire!" and another guy raced over with the fire extinguisher. They got the fire out quickly, but it could have easily gotten really bad really fast.
Judging by their set up, this was a very well established team. But fire is fire, and it can happen to a big team doing 4 turn-ins or someone cooking just ribs.
