Hello. I have been reading some of the posts over the last few weeks and liked what I saw so I decided to join in. I have been BBQing for a few years now but started getting serious in the winter, but I plan to stick to backyard BBQ.
In the short term I am working on my cooking. I will probably build a UDS at some time. I like the whole idea of building my own cooker. I have started to experiment with cooking in the WSM without water pan to get an idea of what it would be like cooking on my own UDS.
Here's some food pron from the past few weeks:
I prefer St Louis style, but got a good price on backs:

Briskett is one of my favorites to cook
This was my first bacon explosion. Still perfecting.
