I've hanging ribs lately in my WSM and a couple Tri Tip with pretty good results. Just wondering if anyone here has tried a Brisket?
 
I've hung them a few times. I also double hooked them and hung them until the stall. Then I wrapped in foil or paper and finished it on the grate.
 
I've never hung meat but the idea scares me. What keeps the meat from falling off? Checking before it's overcooked? Sometimes my stuff falls apart if I'm taking off the smoker.
