Good morning Everyone,
Thanks for having me! My name is Nic and I am from the National Capital Region of Canada. I recently finished building my UDS, and in researching how to use it, I stumbled upon this forum and just had to join, because you guys have an awesome thing going here.
A little bit about me... I work in disaster management full time, and I am doing a master's degree in the same field; also full time, so I have a pretty busy life. On my spare time I like to fish and hunt, work on my motorcycle, hang out with my girlfriend and dog, and most importantly... I love BBQing!
After having a really busy spring with school, and flooding in this area followed by forest fires out west, I finally get to use my UDS for the first time today. I'm going to do a pork shoulder, and I am very excited. I don't know how it's going to turn out, but I got all the info from this forum. (memphis dust rub, cook around 240, wrap at 160, pull off at 175, wrap in towels and place in a cooler for several hours - I also bought an injector and I have cherry wood, but I need to get more info on these if I'm going to use them).
Long story short, I am happy to be here, and here is a picture of my toys!
