Struggling to find a rub that is German or Italian influenced. I am cooking 4 briskets tomorrow night @225 for the long haul for a Foreign Exchange Student Farewell BBQ party.

Brisket #1 - my homemade rub
Brisket #2 - Thai / Filipino influenced rub
Brisket #3 - German - NO RUB YET - need help
Brisket #4 - Italian - NO RUB YET - need help

If y'all have some rub recipes or suggestions please let me know for these.

For German I tend to think of things like caraway, mace, celery seed and mustard. You might be able to work some or all of those into a rub to get a German inspired flavor.
 
For German and beef I always think Sauerbraten. My mother's side of the family came from Germany via Russia and man could my Granny cook a mean Sauerbraten. You could marinade the brisket with a sauerbraten recipe, then smoke it.
