The seems to be an outbreak of Piri Piri cook threads which in my opinion is a good thing. Here's my take on Piri Piri Chicken beginning with the ingredients.
The zest and juice of 2 lemons, 2 bell peppers (I normally like to use anaheim's but all they had were green), 2 red jalapenos, 10 cloves garlic, bay leaves, parsley, red wine vinegar, OO, crushed red peppers (malagueta) and S/P to taste all go into a food processor.
I used thighs for this cook, they were coated with the marinade and some marinade was reserved for basting.
Next I get to fire up my shiny new toy :becky:
For the baste I added some more crushed red peppers to kick up the heat just a bit.
First basting on the grill.
And they are done. :hungry:
Plated with some mac salad, grilled asparagus with some Piri Piri sauce on the side for dipping (so good on bread).
