How long did it rest in the cooler?
You say you stopped at 195F but misured where?
In the grate pics was the brisket meat side up? If yes, it looks like you inserted the thermo into the point !?!?!?

I have to thank you for your promotion of The Naked Fatty. I happened to click on your signature link one day and realized what a great idea it is. Turned a few friends on to it now.

I've heard rumors that the naked fatty has a chance to be inducted into the BBQ Hall of Fame within the next couple of years. Not sure where I heard that.

Rested in the cooler until it got down to 155. Almost 2 hours.

I measured at the thickest point. I went fat side up for 3 hours, sprayed with cider vinegar and flipped to fat side down. When I wrapped at about 6 hours, it was fat side up again. Flat was at about 203.
