Today I decided to finally cook a couple of spatchocked chickens on the Trail Embers Smoker along with a pot of cowboy beans. I cut the chicken, pealed the skin back and coated well with Plowboys Yardbird. seared the bacon and ground beef in a cast iron pot along with some onions I then added the beans and seasonings. When the smoker got up to 350 f I started the cook putting the chickens on the middle rack breast side up and the beans on the top rack. When the chicken reached 165 -175 internal I sauced it and turned it over. When I pulled it out it was up to 185 in the breast. I have to say it was some of the tastiest and moist chicken I have ever cooked. I used apple wood for the smoke. The wife said it had just the right amount of smoke. She loved it. Some pics or it did not happen!!!!
