might want to try seasoning the new WSM before you throw meat on there. Not sure if its right or wrong, but sprayed it down with regular Pam, got it hot for a couple of hours. I did that a couple of times. Worked wekk, helped seal the joints, and gave me some ideas of what temps would do.
I agree with the other comments, you have a WSM, so sit back and enjoy. The meat will come out delicious!
