Regular briskets were getting boring so decided to switch things up a little

Black Canyon choice brisket. These are better than the Costco primes I get. BTW I do get this from Costco also

About 8 days later on the Yoder it went. Only seasoned it with black pepper. Didn't have coarse on hand so I went with fine grind

All in all I'm very satisfied with color, texture, tenderness and flavor. Just a tad bit salty so I will soak in water after brining a little bit longer next time. Thanks for looking!

That is one fine looking pastrami! It would definitely be fun to try some day.
 
That looks amazing.
If you find it to salty, just lower the salt content in your brine. Or you can add some sugar to it to balance things.
I needed a few tries to nail the brine.
