Smoked my first ever butt. A little stressful but well worth it. Used Trader Joe's briquettes. Stayed around the 235° mark most of the cook. No foil. 1/2 hour rest.
It tastes amazing. A little too much smoke I think. I like the smokey flavor and do not use dip normally because you cannot taste the flavor of the meat. The sauce may be good with this batch.
Great looking butt. I use my Kettles for smaller cooks all the time, including doing a single pork butt. I tend to cruise hotter at 300-325 on my long cooks. I have noticed though that on the kettle you will get a smokier flavor so I use smaller piece of wood.
