It's coming, quickly I might add. Our first pro competition is fast approaching. We have smoked everything we plan on entering, read most every tip on this board studied a lot of pictures gone over a few checklists, stocked up on beer.
We are entering ribs, shoulder brisket and chicken. I expect to do well in ribs and chicken and over the half way mark in the other two. In our first competition (Amateur event) we were scored within 6 points of the Canadian champions by the SAME judges one day after they had scored the champions.
anyhow though open to any last minute tips and advice and wish us luck. Lots of pics and hopefully a story or two coming soon
