First cook with the new UDS, doing a pork butt. Do you do them fat cap up or down? thanks!
depends if you respected the 24" rule or not. if you are short for distance then you definitely want it down.

I'm agree, I trim cap off on pork. Brisket downtrimmed. I take off the fat cap before cooking pork butt.
